Kim’s Birthday

Kim’s birthday is this month, and since her mom has been out of the country I knew she’d be craving Asian dishes. It’s always a little intimidating cooking dishes that someone grew up with, especially when it’s not what you cook regularly. But I was super happy with how everything came out.

#39/52 – Green Mango salad

Pretty simple to make and yummy.

#40/52 – Vietnamese braised pork belly – Thit Kho

I’ve had this many times at Kim’s mom’s house, and I think this recipe was amazing. Really fully of flavor. I used a mix of pork belly and pork shoulder, and did way more eggs than the recipe calls for because the girls always like the eggs a lot. This will definitely be made again.

#41/52 – Bok Choy in ginger sauce

Delicious, and I’m not a huge bok choy fan. But I’d make and eat this again.

#42/52 – Vietnamese Caramelized shrimp.

Probably my least favorite dish. Flavor was ok but it just didn’t wow.

And I’m not counting it, as I’ve made cheesecake before, but this was the best cheesecake I’ve ever made, and close to the best I’ve had. Get the Tillamook cream cheese, it’s got a different texture than Philadelphia and I think it really put this over the top. I used crushed gluten free Ginger snaps instead of graham crackers for the crust.

Had a fun Thanksgiving. Both girls dressed up, Hazel went with friends to trick or treat and have a sleepover. Kim and I met up with Margot and her friends and went trick or treating. Margot won a $20 gift card from a costume contest!
