Gluten Free Carrot Cake

Hazel made the fluffiest lightest best cake I’ve had in the nearly 20 years I’ve been eating gluten free. Was delicious and you absolutely could have served it without mentioning the gf part and no one would have ever suspected. Really good, and carrot cake is my favorite so I really enjoyed it.

We got Hazel a GF baking cookbook for Christmas. When it showed up I was a little concerned about the complexity. This recipe used 4-5 different types of flour. But Hazel nailed it.
